Ingredients

  • 8 slices high-protein bread or thick-cut whole grain bread

  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 tablespoon maple syrup or honey
  • 1/4 teaspoon fine sea salt
  • 1 tablespoon butter, divided, for cooking
  • Cooking spray, as needed

Method

  1. In a large shallow bowl or baking dish, whisk together the eggs, egg whites, Greek yogurt, milk, protein powder, vanilla extract, cinnamon, maple syrup, and salt until smooth. For the smoothest custard, blend the mixture for 15 to 20 seconds.
